Worth knowing first
Read the landlord’s work letter before comparing rents
Most food space in Milton is new. Plazas along Derry Road, Thompson Road South and Ontario Street serve the subdivisions built since 2000. Many units are first-generation shells with a slab, a sanitary stub, a roof deck and an electrical service sized for a store. In those plazas, the landlord’s work letter moves the budget most. A sanitary stub sized for a restaurant, a gas line or a framed roof opening each saves real money. Newer Derry Road roofs carry a manufacturer’s warranty, so penetrations go through the landlord’s own roofer. Ask who pays for each item before you sign.

Frequently asked questions
Restaurants in Milton: three local questions
Before construction starts, not when you are ready to open. Halton Region Public Health asks operators to notify it before building or renovating a food premises. Its online form is reviewed and staff follow up within 2 business days. An inspector may visit during the work, and an inspection takes place before you serve the public. Send the floor plan with the notice, because sink locations are cheaper to fix on paper.
Restaurants inside the Downtown Milton BIA, from Bell Street to Fulton Street and Mill Street to Mary Street, can apply to the Temporary Downtown Patio Program. The 2026 season runs from the Victoria Day weekend to Thanksgiving weekend, and applications are due April 30. Fees are $698 for a first or changed application and $524 to renew. You need $5 million in liability insurance.
Both have a part. Halton Region owns the wastewater system, so its sewer discharge by-law sets what may reach the sewer and requires grease to be kept out. In practice that means an interceptor on every grease-producing fixture. The Town of Milton’s Building Services issues the plumbing permit and inspects the installation. We size the interceptor to the connected fixtures and place it where a pump truck can reach it.
